Valentine’s Day Dining: Burrata with Tomato & Cucumber Salad
If you are wondering what to make for your Valentine’s Day lunch or are looking for a simple evening appetizer, we have you covered with this crisp and fresh cucumber and tomato salad with burrata. This dish is light and simply delicious. You get bright flavors from the tomato and balsamic vinegar and creaminess from the cheese.
You may be asking: what is burrata? It’s a soft mozzarella cheese with a rich center that bursts out once you cut into it. You will impress your loved one with this salad. It is simple to assemble and will be ready to eat in less than ten minutes.
2 heirloom tomatoes
2 Persian cucumbers or one English cucumber
1 Tbsp. balsamic vinegar
1 Tbsp. extra virgin olive oil
1 ball of burrata
Salt and pepper to taste
1/2 c. microgreens (we suggest radish microgreens for texture)
Flaky sea salt to garnish
1. Cut each tomato in half and then cut each half into quarters.
2. Cut cucumbers into bite-size pieces.
3. Place tomatoes and cucumbers in a small bowl. Add balsamic vinegar, olive oil, salt, and pepper. Toss to evenly coat vegetables.
4. Place burrata in the center of a shallow dish. Spoon the salad around the cheese. Top with microgreens, a drizzle of olive oil, and a sprinkle of flaky sea salt.
Serve with small slices of toasted bread or crackers.
