April 4: Winemaker’s Dinner with Canvasback Winery of Walla Walla, Washington

Coho Restaurant is excited to welcome Joseph Czarny, winemaker, to host the evening. Canvasback wines express the depth, structure and sophistication that defines Washington winemaking and paired with Chef Tim Payne’s spring-inspired menu, this match promises to be a memorable evening. We’ll book end the dinner with the Decoy Brut Rose, which is part of their California Project, and taste the Canvasback riesling, rose, syrah and cabernet. These are intimate evenings where you will be able to interact personally with Joseph and Tim to get insights on their craft.

Joseph Czarny honed his craft working in wineries throughout the US, Australia, and New Zealand and has developed an intimate, vineyard-focused approach to winemaking. Joseph was born and raised in Arizona and moved to Washington State in 2013 to study enology and viticulture at Walla Walla Community College. For the next several years, Joseph alternated between northern- and southern-hemisphere harvests, gaining extensive hands-on winemaking experience. After returning to Washington in 2018 with the goal of putting down roots in the community that first inspired his love of winemaking, Joseph joined Canvasback as a harvest intern and rapidly rose through the ranks from production assistant to enologist to assistant winemaker.  Joseph continues a tradition of crafting dynamic, complex and compelling wines rooted in the vineyards.  Joseph focuses on harvesting each site at its ideal ripeness, developing techniques to tame Washington’s robust tannins, and refining the cooperage program to elegantly showcase the natural beauty of the grapes.

There is one seating at 6 p.m. Dinner is $85 and the optional wine pairing is $40.  Chef will gladly accommodate any dietary considerations with advance notice.
