Recipe: Homemade Crepes

Ingredients:

  • 3 cups flour
  • 4 eggs
  • 4 egg yolks
  • 1 qt milk
  • 2 tsp sugar
  • 1 tsp salt

Method:

  1. Mix ingredients together until smooth.
  1. Spray medium skillet with non-stick spray and pour 1/8 cup of batter into pan.
  1. Turn over and add filling (Get creative! fruit, cheese, ham, prosciutto, etc.) and fold over.
  1. You can make them a bit in advance and keep warm in the oven.
  1. One recipe yields about 32 crepes.
