Countdown to Christmas #11: Herbed Cheese Crackers

From now until December 24, we’ll be counting down the days until Christmas by sharing a special series of sweet treats and savory snacks from the Coho Restaurant kitchen. Let us know what’s cooking in yours this holiday season!

Herbed Cheese Crackers

1/2 cup butter, softened
3/4 cups unbleached all purpose flour
2 1/2 cups Parmesan cheese, finely grated
1 large egg + 1 T milk for egg wash
dried herbs for topping

Preheat oven to 350 degrees.

Combine butter, flour, and cheese to form a soft dough. Roll out the dough to 1/8″ thickness on a floured surface and, using a 2-3″ circular cutter, punch out the crackers. Lightly beat together the egg and milk and brush each cracker with the egg wash. Sprinkle lightly with dried herbs. Bake until lightly browned, about 20 minutes. Allow to cool completely on a wire rack before serving. Store in an airtight container.
