Shrimp & White Bean Salad

(Garlic Shrimp with Mediterranean style bean salad)

Beans

1 c. cannelloni beans – cooked in pepper, garlic, herbs and rendered duck or bacon fat
1 red pepper, roasted and cut thinly into strips
2 cloves garlic, roasted
Pinch cayenne pepper
Splash, lime, freshly squeezed
Salt and pepper

1. Puree half the beans with 2 cloves of roasted garlic. (Optional variation add ½ roasted red pepper.)
2. Mix with whole beans.
3. Add cayenne pepper and lime juice.
4. Salt and pepper to taste.

Lemon Vinaigrette (optional)

2 Tbsp. lemon juice, freshly squeezed
1 Tbsp. shallot, minced
1 tbsp. fresh herbs, chopped (thyme, fennel, tarragon, basil, dill or parsley)
½ c. olive oil
Salt and pepper

1. Combine ingredients above.
2. Season to taste with salt, pepper and fresh herbs.

Salad

1 c. arugula
4 roasted cherry tomatoes, halved
Salt and pepper
Grilled focaccia or artisan bread

Shrimp

1# shrimp, cleaned and deveined
2 Tbsp. butter
1 Tbsp. olive oil
2 Tbsp. white wine
1 Tbsp. garlic, minced
Pinch red pepper flakes
Parsley
Splash lemon juice, freshly squeezed

1. Melt butter and olive oil in sauté pan.
2. Add 1 tsp. garlic, red pepper flakes.
3. Sauté until garlic just begins to brown and add white wine and shrimp.
4. Turn shrimp.
5. Remove from heat add parsley, lemon juice and pepper to taste.

Plating

1. Toss arugula lightly with lemon vinaigrette.
2. Place in center of the place.
3. Place one scoop white beans on top of arugula.
4. Place sautéed shrimp around the beans.
5. Garnish with cherry tomatoes and roasted red pepper.
6. Garnish shrimp with some parsley
7. Serve with grilled focaccia or crusty artisan bread.
